Learn How to Cook Chicken Caldereta, A Filipino Family Favorite!

Among Filipinos’ all-time favorite chicken recipe is the Chicken Caldereta. This is often seen in families’ dining table and has been part of parties, fiestas and other special events. The ingredients for this delicacy are chicken, liver spread, hotdog, potatoes, carrots, tomato sauce, bell pepper, onions, garlic, soy sauce, laurel leaf, soy sauce, salt and water. 


For 1 kg chicken, below is the amount of each ingredients

  • 1 kg chicken, cut into chunks.

  • 1/4 cup tomato paste 

  • 1 cup tomato sauce)

  • 1 small can of liver spread

  • 6 pieced hotdog, cut in small pieces

  • 1/4 cup grated cheese

  • 1 big onion, quartered

  • 6 cloves chopped garlic

  • 3 pieces medium sized potatoes, quartered

  • 1 piece carrot, cut to small pieces

  • 1/4 cup boiled green peas

  • 1/4 cup soy sauce

  • 1/4 cup vinegar

  • 2 pieces bay leaf

  • 1/2 teaspoon ground black pepper

  • 2 pieces red bell pepper 

  • 1/2 cup green peas, boiled

  • 1 teaspoon fish sauce

  • 1 teaspoon salt

  • 2 table spoon cooking oil

  • 1 cup water

Cooking Procedure:

First, saute the garlic and the onions. Then, add the chicken, stir fry until the color became brownish. Then, add the hotdogs potatoes, carrots, bell pepper, black pepper, tomato paste, tomato sauce, bell pepper, laurel leaf, soy sauce, vinegar, black pepper and 1 cup of water. Bring to boil then lower the heat. Simmer for 20 minutes until the chicken and the vegetables are tender. Add the green peas, liver spread and the grated cheese. Season with fish sauce and salt to taste. Serve hot and enjoy with rice.
